Recipe: How to Make cream of corn
Ingredients:
- 4 fresh corn cobs
- 2 cups 16 oz of milk
- 1 cup of sugar and Cinnamon to taste
Instructions:
- Prepare the Corn:
- Wash the corn cobs well under running water.
- To husk the cobs, place them on a cutting board or inside a large baking tray. Stand each cob upright and use a knife to cut the kernels off. Alternatively, use a corn kernel extractor if preferred.
- Blend the Mixture:
- In a blender, combine the corn kernels and milk. Blend until the mixture is smooth and well-crushed.
- Strain the Mixture:
- Place a sieve over a pan and pour the blended mixture through it. Use the back of a spoon to press and extract as much liquid as possible. Discard the remaining pulp.
- Cook the Curau:
- Add the sugar to the strained liquid in the pan.
- Heat over medium heat, stirring continuously with a wire whisk until it begins to boil.
- Lower the heat and continue stirring for another 20 minutes. The mixture will thicken suddenly—if it clumps or sticks to the pan, remove from heat and whisk vigorously until smooth.
